Restaurant's Resurgence: Renowned Vegan Eatery Resumes Serving Meat
In a surprising turn of events, Eleven Madison Park, the renowned fine dining establishment in New York, is set to return to serving meat after a four-and-a-half-year hiatus.
For the past four years, the restaurant has been exclusively plant-based, a decision made by its top chef, Daniel Humm. This move made Eleven Madison Park the world's first purely vegan three-star restaurant. However, the all-or-nothing vegan approach, while applauded by many, proved financially challenging, particularly in attracting large private events.
The return of meat to the menu is not a complete departure from the plant-based focus. The new menu will still have a predominant focus on plant-based dishes, with select animal products such as fish, meat, oysters, lobster, and duck making a comeback. The legendary dish with duck and lavender honey glaze is among the meat dishes returning to the menu.
Chef Humm explained that the restaurant wants to embrace a more flexible, inclusive menu that still centers on plant-based dishes but offers select animal products. The aim is to create a better dining experience for all, ensuring more guests feel welcome around the table.
The decision to reintroduce meat to the menu was not made lightly. Over the past years, the restaurant has faced challenges and listened to customer feedback. The new menu, set to debut on October 14, 2025, aims to balance creativity, hospitality, and financial viability.
Eleven Madison Park's return to serving meat marks a significant shift in the dining landscape, demonstrating the evolving preferences and needs of diners. The restaurant continues to lead the way in culinary innovation, balancing tradition with progress.
