This boreal mushroom grows on Canadian birch trees, but can also be found in other northern regions worldwide. It's long been consumed for its therapeutic properties and super-high antioxidant concentrations.

You may find the chaga's appearance a tad odd – it looks a burned stump on a tree, but trust us, its taste is way better than it looks. Chaga decoction has a woody, earthy flavor with a hint of sweetness, reminiscent of coffee (minus the bite) and mild aromas of maple or birch syrup.

Recipe for Chaga and Honey Kombucha Prep Time: 15 minutes Cook Time: 4 hours Total Time: 4 hours 15 minutes Servings: 8

Ingredients

For the Kombucha

  • 3 quarts water
  • 12 teaspoons tea
  • 1 Kombucha SCOBY and its liquid culture (around 13.5 fl oz)
  • 2 cups sugar

For the Chaga Decoction (Flavoring)

  • 2 cups water
  • 12 teaspoons chaga nuggets
  • 1/2 cup honey

Instructions

Kombucha Preparation

  • Combine 2 cups boiling water with the tea and let it steep for 15 minutes. Discard the tea afterward.
  • Dissolve the sugar in the remaining water.
  • Mix the sweetened tea with the remaining water for the kombucha.
  • Cool or let the tea reach room temperature before adding the kombucha SCOBY and its liquid culture.
  • Cover with a cotton cloth and secure with a rubber band.

Fermentation

  • Ferment the kombucha for 10 to 15 days. Taste it starting on the 5th day. If you like it tangy but not too sweet, go ahead to the next step.
  • Remove the kombucha SCOBY and about 2 cups of kombucha for future batches.

Preparation of the Chaga Decoction (Flavoring)

  • Combine the chaga and water in a saucepan. Bring to a boil.
  • Lower the heat, cover, and simmer for 3 to 4 hours.
  • Strain the decoction, retaining the chaga nuggets for later use.
  • Stir in the honey until it's dissolved.
  • Let the decoction cool.
  • Add the decoction to the kombucha and mix well.
  • Transfer the kombucha to pressure-resistant bottles and let it ferment at room temperature for 3 to 4 days.
  • Refrigerate when it's bubbly to your liking.

Note: Chaga can be used for 3 to 4 decoctions. If not used within a few days, put it in an airtight container in the freezer. The chaga will lose some potency with each use, so adjust the recipe as needed.
